Here's a no-nonsense, yet upscale-feeling model I call the “Sous Chef.” This is a knife built for work, yet sporting nice materials and an elegant mien. The construction is very simple- a one-piece blade and bolster, married to a nice solid block of stabilized redwood burl. The steel is 52100 carbon alloy, forged and heat treated carefully to produce a nice, stable, fine grained edge.

This knife features a “stingy bolster” i.e., forged short to yield the benefits and looks of an integral without much in the way of added weight. The corners of the bolster, as well as the full length of both the spine and heel, are rounded for comfort. All steel is hand rubbed to 600 grit.

The handle is sculpted and given a super glue finish for some added stability and bling. It feels very good in the hand!

Salem, this knife is truly stunning. Unfortunately, my chef skills are mediocre at best and definitely not worthy of a knife of this beauty. Someone will be very lucky to own it. I love the "stingy bolster," and the handle looks fantastic. Bravo and well done!

In a pinch grip, do the three fingers on the handle fall on the forward part of the handle, or the pinky on the rear section? Don't see a picture or part of the video showing this. Thanks.

Reede, thanks for the good question! For me, (medium size hand) my pinky falls right past the angle change into the rear section, from a pinch grip. Feels pretty good to my hand. I get a little bounce off the pinky when cutting this way, it does not have to stretch for leverage as it might did it not fall in that hollow spot.
