931 chef knife

I am considering buying one.
Does anyone here have and use one?
And if so, how do you like it?
Is it flat ground or hollow ground?
 
I highly recommend the kitchen cutlery I bought a few on the cheep from the bay and I'm very happy with them ,
pay no attention to the Alaskan Guide knife :D

If you can use your BCCI discount and buy the whole butcher block set I would


And yes the chefs knife is a real pleasure to work with .
 
Yes, we have one. I gifted my wife the entire deluxe 13 piece set, model 938 for our 20th wedding anniversary , sometime back. She loves them and uses them all the time. For reference that is the French Sabatier pattern, a old shape. It is flat ground down to 3/4" from the edge. From there to the edge it is hollow ground. It cuts and slices very quick with little drag, good spine and ruggedness. Shows good balance and does not express heaviness. Because of its generous width it is easy to sharpen and hold at the correct angle on a stone. Plus, the 420HC steel has good stainless properties. We enjoy using it and I think you will too. DM

Other than the steak knives there is one more knife in the set than those above^. Which is the 934, a 2 3/4" paring knife. DM

So do you think the 4" paring knife would make a decent steak knife? (I am not very fond of serrated blades)
I was considering the ergohunter boning k ife for use as a steak knife, but might be a little big.
My thinking is to start with the chef knife and 4 of the 4" paring knives.
Then get some of the others later on. (If I spend too much at once, my gal will not be pleased ;) )
 
Yes,. I think it could. Most kitchen sets come with 3 standard knives: a 8" Sabatier, 6" boning and a 4 or 3.5" paring blade. The Sabatier is usually a vegetable blade so, some sets add a 7.5" carver. The carver Buck put in was the 932 a serrated blade. A 4 knife kitchen set with a fork will handle anything. Good carving. DM

I have the identical chef's knife that Dale posted in his picture above. I use it and like it a lot.

I have an identical slicer like he posted on the way to me right now. Buck mailed it a few days ago. Looking forward to that one.

I wish I could say I had one of those fillet knives. One of these days……… :)

So I am squirreling away as many pennies as I can, and soon will be able to order the rosewood 7 piece set :)
One of the pieces being the rubberwood block.
And then later on, I will figure out the steak knives....

It's all D-RIG's fault....I would have been happy with paperstone handles, until I saw his photo with the rosewood handles...lol
Those rosewood handles are just so nice looking :)
 
I got my 932 slicer in the mail the afternoon of the 10th. I am using that one more often than the 931, but both get to cut things each day.

The 932 is not only excellent for the ham I've been working on, but it does a much better job slicing bread than my dedicated bread knife.

It seems like slicing bread cleanly is a challenge for most blades!

How long did it take for your slicer to arrive after you ordered it?
The website says they are built to order and to expect a 4 week wait.

It took about a week and a half from the time I placed the order until I was slicing stuff with it. :)
 
That is indeed good news!
4 weeks is a long time to wait.... I am somewhat impatient when it comes to waiting for a knife, waiting for 5 knives and a fork compounds the impatience!! hahaha :)
 
Ok, just "pulled the trigger" on the 0930RWS6-B :)
6 knife set with block :)

(also ordered 3 sheaths for knives I bought on the bay, that were missing them)

And the anxious waiting has now begun....hahahaha
 
I have to say that I am really loving' my new Buck 932 slicer!!
I always had trouble scoring my loaves of bread with knives. I've tried lots with much less than satisfactory results.
I even bought a Victorinox Bread Scoring Knife made especially for that. It worked, but not as well as I hoped.
This morning I decided to give the 932 a try for scoring the bread before I baked it and was surprised at what a pleasant and easy task that knife made it!!
Now, not only do I enjoy slicing my already baked artisan loaves with the 932, I enjoy scoring the loaves before they are baked. :thumbup:

I still use my 931 for lots of kitchen tasks, but I use the 932 much more often!!
 
Yes, my wife uses hers for that too and likes the way it handles the job. Your hot cross buns look delicious. DM

I can't wait till the kitchen set arrives.
I figure with the holidays and the roll out of new models, it might be a while until they get here.
One week down, and a few more to go :)
And then we will be chopping, slicing and dicing in style ;)
 
Well, I got a shipping notice email last night, but it looks like they are seperately sending the 3 sheaths I ordered first.
Those should be here monday :)

I can't wait until they finish making the kitchen set, ship it, and I can start using it! ;)
I had to carve a prime rib on christmas, with an el cheapo knife....lol

2 weeks down, a couple more to go :)
