931 chef knife

Steady,--- steady boy. Your doing fine. DM

hahahha
yeah,I am hanging in there....

When I get the 6 knife set, I am going to test/decide if the 4" pairing knife would be a suitable for steak knives, and if so, order some to complete the set.

And also when I order the pairing (or steak) knives, I wonder if, since they are made to order anyway, if I could talk them into making another slicer, but skip putting the serrations on it.
That would be a sweet blade, and would save them a little time making it.
They probably wouldn't do it, but a guy can hope!

Then the serrated one could be for bread etc, and the other one for carving meats.

Honestly, I think that's a pretty good idea. Buck is known for trying to please it's customers. So, it can't hurt to ask. DM

Thanks for the feedback on that :)

I seem to recall you said you.have the full cutlery set.
looking at the photos on their website, the steak knife and 4" pairing knive seem pretty similar.
The same handle and choil end of the blade. The main differences seem to be the pairing knife has a bit of a drop point, and the steak knife is serrated.

What is your opinion of the pairing knives used as steak knives?
Or do you find the steak knives to be better?
I like the idea of being able to easily sharpen kitchen knives........

Yes, I understood you didn't care for serrated edges. In my estimation the 4" paring knife would make good steak knives. One could dull it easier by cutting into a ceramic plate. I've used the 4" paring knife to cut up large whole fryers and it worked well for this. Something a 3" Paring knife is challenged at doing. The 4" paring blade has more width than the steak knives. Your welcome, DM

Thank you!
That is exactly what I needed to know :)

So......
The doorbell rang this morning :)
My gal answered the door, and received a large box from ups.
She then said to me "What is this? A giant knife"......hahahaha
I said "That is the secret Christmas Present I ordered".

I had her "unwrap" it.
She said "I should have known, you have been talking about new kitchen knives for a year!"

I have to say I love them!
They are BEAUTIFUL!!!
So far all we have used them for is she cut up an apple with the large pairing knife, but it worked extremely well :)

Now I just have to squirrel away some $ to get 6-8 steak (or large pairing) knives :)

Just got an email reply from Joe, it looks like no luck on the plain edge slicer.....
Oh well.... maybe I will find an empress one for a decent price someday.....
So the next items on my list are the knives for eating steak :)
I feel the time for them to be ordered is getting close!

I'm glad she likes them. A handsome set. Good luck of finding a Empress Tri set for under 100. DM

Thanks David!

She does like them. She tested out the spreader a few minutes ago. That thing is just plain cool.
Funny thing is.that I did most of.the cooking until a couple years ago. (I was a cook all through college)
Then 2 years ago she decided to hone her culinary skills, and now she cooks like a champion :)
So we take turns cooking now.
Those knives are going to get a ton of use.

The Empress set..... those things are usually way too pricey.
Honestly I just hope to find the large carver seperately, and I would be quite pleased.
