Ah. For some reason I was picturing a nice little picnic slicer. For a blade that could tackle a roast beast, maybe Grohmann has something suitable. The W4SF has a good 5.5" flat-grind blade with a nice water buffalo handle. The stock Grohmann sheaths are rather plain though.

Wonder if it would be possible to get the carving knife, fork and sharpening steel without the smaller steak knife?

The carving set is sold as a unit. The steak knife must be ordered separately.

I've used that carving knife for years and I still love it.
 
have you considered buying an old hickory with your preferred blade style and length and then rehandling it yourself with some more to your liking?

Nossir, Old Hickory knives are great users and I have put handles on several, but I'm looking for something more upscale, and stick tang.
