These 3 kitchen knives all have some defects I didnt notice until finished and are marked down dramatically from my normal pricing. These are the first chef knives Ive attempted a convex grind on. After hand finish when viewed under certain lighting (namely yellow) you can see where some of the grinding is not smooth throughout the bladelength. I never saw this under fluorescent lighting and it wasnt until looking at them after finish that I saw it. The hand rub finish is true throughout and there are no grindmarks left from the belt - just can see at certain reflections you can see the convex is not smooth throughout. This does not affect the performance at all but is worth noting before purchase.
