A good "truck" blade

I'd throw a glock field knife in there along with a machete or axe (depending on your environment), and maybe a folding saw if you need one.

Good machete, I like the 12" Ontario. It is shorter & thicker so stiffer.
Good axe, I like the Fiskers. You pick the size.
Good saw, I have a 12" bow/ hack. A 21" bow saw will get through some wood fast.
Good E-tool. I have a GI issue one.
All tools need to be of good quality. You don't want them to break when you really need them but you don't need to spend a small fortune ether.
One last thing a Good file to keep the axe & machete going. I like a raker file.

I see someone beat me to it, but the Jungle Canopy with its heavy 10" hollow ground blade should serve you well. I don't have a truck, but my ATV has an old Nam era Ontario machete that clears the path well. My Jungle Canopy hangs from a pistol belt and clears the trails as needed. Nice tool for $36 at wallyworld.

KaBar Grass Machete stays under my seat all the time. Has chewed through a ton of brush and small tree clearings. It's like a mad beaver in the woods. Tough as nails too.

OP: For the specific purpose(s) you reference I would recommend any cheap machete and a Becker BK-4 which is a very versatile knife IMHO.

I am late to this thread but I agree with a few other posters.

You need a hand saw, axe and your basic knife in your truck.

You should not expect a knife to do the job of an axe or saw.

When you really NEED the proper tools to get you out of some situations while out in the boonies - you need them just as much as you when need a shovel or a basic emergency bag in other situations too.

Best wishes to you.

A mix of tools is the answer in a "truck knife" situation and it depends on the kind of climate and geography you are dealing with. A shovel and a good jack may take precedence over most "other" cutting tool, but space concerns in a truck is generally not a significant issue as you are tethered to your vehicle in most emergency situations.
