Could you find out what his colleges use? That might give you some insight as to what style to lean towards.

Also like IRON HEAD said, carbon steel that gets used doesn't get rusty, at most a patina.

The RAT knives have pretty tough coating to resist rust.

It all depends on how much you desire to spend. If I had $215 on a heirloom knife that was also supposed to be a user then I would get one of the Dozier knives that A.G. keeps in stock on his website at http://www.agrussell.com/dozier-knives/c/2529/
