a Nick plus a ??? would be the best kitchen combo?

For the most part:

Thin NICK
SRKW Bog Dog in D2
Older custom shop AD

Other blades get called in as needed, but those 3 handle 90%+ of the kitchen duties.

What's that middle knife, that would be the ideal kitchen knife for me given it's not too thick. A very Santoku like design.

It's called a xxxl nick. it is .22" thick.
There is also a thin nick which is .09'' thick.

I've been lurking here for a few years and have never seen one, I don't suppose you would be willing to part with yours.:D

Got some arvn rifles, never fired and only dropped once.

Just did it yesterday...

There was a beautiful satin finish underneath..!!!!
I'm in the process of hand polishing the blade with a towel and a special compound... No sand paper for this project.... :thumbup:

I think it looks better than the tan coating by a lot ....
So is this the only CS DSJ to ever be stripped ???
 
03 was before my enlightenment to the ways of the hog.

+1 on the culti. I've seen several folks post that they have a set of culti for steak knives.
 
ya'll might have thought I was kidding about the customized NICK's - nope. I've had similar things, and with a straighter slanted edge, the ones I made could have been a billion times better. The key is angling the edge a bit and keeping the points thin rather then broad, cause the 3rd gen handles really don't leave that much room when chopping if the blade is thinned down to paring size.
