Interesting poll, and it is generating some interesting results. ATS-34/154CM is a very good all around steel, and some of my best knives are made out of it.
My current preferences though are for 3V or 10V. I don't have much of a corrosion resistance requirement of my knives, at least that can't be handled reasonably well by a coat of mineral oil, so I am more focused on toughness and edge holding. 3V is my choice for big blades, and 10V for small ones. These are reall extreme performance steels if properly heat treated, 3V offering great impact toughness and 10V offering amazing wear resistance.
For a stainless working knife, I have really been favoring gool ol' 440C lately. Highly rust resistant, holds an edge better than the standard 420 production stainless steels, almost as good as ATS-34, and sharpens fairly easily in the field. It would be interesting to see a side by side evaluation of 440C and VG10 one day.
