A question about motor/belt speed

My belt grinder has a 3400rpm motor on it. This gives me a belt speed in excess of 5000 fpm. Works great for hogging down metal, but to fast for many applications.
I have the opportunity to get a VFD unit with a 1800 rpm motor. This will give me a Max belt speed in the 2700 fpm range. So my question is , will this be to slow, and will I be wishing I had a 34-3600rpm motor with the vdf?
My thanks in advance, to those that can help.

5000 SFM is cooking. A nice range is 1000-5000.

If I could only have one speed, 2700 would be good, but for the top end on a variable speed system that is probably too slow by half. A larger drive pulley and/or drive wheel, and/or a smaller input pulley will raise your range.

I like lower RPM motors - they last longer and (generally) vibrate less.
