Just a quick one.

I know the SAKS and Spyderco UKPK knife make use of a non-locking slip-joint locks, but are there other types of non-locking knife locks out there?

For example, the T-MAG makes use of a magnet as the lock mechanism.

Any other types?

Yeah, there are all kinds of slipjoints. Take a look at Case knives for example. Start there.
 
I think TKC reffers to different non locking systems knives here. Apart of the magnetic lock and the good old slipjoint, the only ones that come to my mind right now are the straight razor and the friction folder, where the back of the blade has a "tail" which goes into the handles when you open the knife (see the saca tripas for instance).
And I think you could say the latchless balisong is non lockable - well, from a certain point of view. ;)
 
That's what I was hoping to hear.
I've got a slip lock design in mind, but I'm not sure if it's been implemented elsewhere already. If it hasn't, then I'm hoping to show the design to Sal and get his opinion on it.
