A sharp knife is safer...

Depends on the person. Some folks just don't seem to be able to handle a sharp knife. I don't know how many times people have cut their fingers by wiping the edge of a knife that they just had me sharpen. In fact, it just happened again yesterday. They always seem surprised when the knife slices through the rag.
 
What a great line - may I please have permission to use it?

We have an old saying "The monkey that can't dance says the floor's uneven". I like all my blades ASAP (that's As Sharp As Possible)

My point being, at what point is a knife TOO sharp? (Sorry if this has been discussed before)

A knife is too sharp only when the edge cannot withstand the the tasks which is thrown at it, and the edge chips, rolls, or dents.

In other words, it depends on the job. Is a scalpel more dangerous than a butterknife? Yes, but you don't spread jelly with a scalpel, that would be a misapplication.

On the otherhand, do you want your surgeon cuttin you open with a SAK? Prolly not!:eek:
