Here is a Santoku that I just completed. What makes this one special is that it was ground to the quick which means it was sharp with out sharping it. Look closely and there is no bevel. It has been honed to razor edge. The thickness is .058 and will be easy to keep sharp. I used 15n20 steel to make the knife. When profiling the knife I made a slight curve up on the edge which starts about 1 3/4 inches from tip and gives a great angle for rocking when cutting veggies. This is NOT for chopping bone The wood is Brazilian Rosewood. Blade length is 6 3/4 inches and overall length is 11 3/4 inches.
