Probably. IMHO, any medium speed quench oil is probably OK. You don't have
the super tight nose to worry about so what a good oil is giving you is more uniform
quench (less cavitation etc.) and a slower transition from around 900F down to around
450F.
He hasn't been on here for a while but Walter Davis was having good luck with the 28 second oil from McMaster Carr. It looked like he was making good choppers and users.
I'm using Houghton Quench K and having great success with 1070/80, W2 and 5160. It has been compared to Parks 50 but with a longer usage life. It is a fast oil and I've had no issues with it.
I would do an interrupted quench in that case instead of buying new oil for a bit of 5160. That's just what I would do, too fast an oil is not as much a concern as too slow IMO.
