Recommendation? Advice on steel

I bought my oven, because I wasn’t comfortable building one and I’m glad I did. I went for the longer evenheat, I think it was 22”, it keeps enough room from the coils to where my blades are in the sweet spot according to my testing. Not to mention if I want to do a longer blade, I can.
The only reason I didn’t buy a paragon was after talking to someone who owned one they said customer service was a nightmare.
I’ve been very happy with the evenheat. It’s very accurate and heats up fast.

glade you like it, I have never owned one personally. I have one friend that used his a bunch and just had rotten luck with his. Thy where a nightmare to deal with customer service. He went through 2-3 controllers in a very short order and it was like pulling teeth getting a replacement at their cost. Talking to him he told me he had a friend that also had an even heat that was blowing through controllers. So yeah, never owned one but that was enough to leave a sour taste in my mouth.

it may be because I got the 3 button controller. I thought about getting a more sophisticated one like the TAP, but I didn’t plan on doing a ton of different steels, I figured I could always upgrade later.
 
In all honesty as much as I love the tap controller when I build the next oven I’m probably going with a watlow ez zone with proportional controls. That way it’s not on off it adjusts the total output power like a Dimmer does by pulse width modulating.

If you are doing kitchen knives I find 15n20 is a great steel that can achieve good results even with a simple heat treat as a beginner. The other thing about it is that it has just a little rust resistance that makes it a lot nice than something like 1084. If you have a wife that's going to help your marriage when she leaves it in the sink half full of water.
