Hi guys,
I'm offering this chef knife which is Aldo's AEB-L. It's a new design for me with the more sweeping heel which seems to allow for a comfortable pinch grip. The handle is long enough to hold it traditionally as well. It's handled with Australian Dead Finish. It's in the Acacia family and it has some really amazing coloring. It reminds me of Cocobolo but with smaller pores.
Here are the specs:
Steel: AEB-L 0.074 just in front of the handle tapering to 0.03" near the tip. HT by Peter's to RC61
OAL: 11.5"
Blade Length: 6.25" Hand sanded to 600 grit
Handle Length: 5.25"
Edge: 0.01" behind the sharpened edge
Handle: Australian Dead Finish with white G10 liners and black micarta pins.

That would be a round the world trip for the timber.

I've had a chance to chop a variety of food with this knife now and I've gotta say it's a very comfortable handy blade.

Thanks Tim! I'm glad you like it!
I have made kitchen knives with more curves and finger choils etc and liked them but sometimes a "simple" design is just as good or better.
