Hi all,
I've got this chef's knife up for sale here tonight. It's AEB-L steel heat treated by Peter's to RC61. The handle is rare Australian Jarrah Burl which came out with tons of great figure and polished up like glass. The bolster is Black G10 which I canted forward slightly to change the look a little and aid in grip. The blade is ground full flat with the bottom 1/4 convexed to aid in food release. The edge was taken down to 0.005" before sharpening.

Specs:
OAL: 12.5" (317mm)
Blade: 7.5" (190mm) long, 1.87" (47mm) heel height. Full flat grind with lower 1/4 convex. Hand sanded to 600 grit satin finish. Edge down to 0.005" before sharpening.
Steel: 0.1" AEB-L heat treated by Peter's to RC61
Handle: Australian Jarrah Burl, Black G10 bolsters. Black micarta liners and pins and white G10 pinstripes.
