AEB-L Mini Chef & Santoku

For your consideration ar 2 knives.MINI CHEF IS GONE, SANTOKU IS AVAILABLE Both are made from 1/8 thick AEB-L steel hardened and tempered to an averaged Rockwell hardness of 61. The blade is flat ground with a slight convexed edge. The spine and choil area are rounded for comfort. Handles are dyed and stabilized curly maple over black G10 liners secured with Acraglass epoxy and 2 stainless Corby bolts.

These knives are a modified and scaled down pattern I got from Jason Knight during a 2 day internship program I participated in last year.
