I really like the 12" right hand hollow grind on this one. From the testing we have done the hollow chisel w/ a V-grind is perfect for chopping veggies. Also the terro tuff is really grippy and gives a nice solid grip.

I hand make all of my knives using the stock removal method and buy all all of the materials from American vendors. And only a little bit of child labor was used in the making of this knife ;)

Santoku 5.5 in AEB-L stainless

.70 Aeb-l stainless steel
5.5" blade, 9.75" total
Bos heat treat and cryo to 61rc
Right hand chisel grind ground to about .005" , v ground secondary bevel
Tan terro-tuf and black liners .
2 black micarta pins holding it all together and a chunk of round jade ghost g10 in the middle.
