Hey guys, I just finished up this super thin Aebl Gyuto. I don't normally use the term laser on a kitchen knife, but I think this one qualifys. The edge is right around .005" before sharping, full flat grind.
The handle is 50+ year old vintage micarta, it has a cool unique texture that is different than modern material.
Here are the specs.
OAL - 13.25"
Blade - 8.125"
Steel - Aebl .088" at the thickest point Cryo treated and is right at 62rc
Handle - Vintage micarta from the 60's
Pins - signature copper/carbon fiber
