Hello knife people! I had a request for an every day kitchen knife for an elderly mother of a family friend. He didn't want a chef's knife, so I suggest a 5" Santoku. My wife has one identical to this and she uses it a lot more than her CPM154 8" chef's knife. It's pretty simple, but so powerful in the kitchen. 0.075" AEB-L at 63HRC with "cryo", full flat grind down to "zero", backed off just a tad, and sharpend to 8° per side with 8k waterstones. I lowered the angle a bit and stropped on 4 micron leather to bascially knock the edge shoulders off, then raised to 12° per side with a Shapton UF ceramic to give it a bit more bite. It goes through cherry tomatoes like they aren't even there. I have made a lot of these Santoku's, and clients love them, and I love making them! If you're looking for a custom knife, hit me up!
