This is another of my Chef Knives that is working out for Professional and Serious home Chef's. It is Full Tang construction and Distal tapered for balance and rigidity. This one will handle some heavy use.
Spec's;
Forged to shape 1084 Blade.
Full Quenched and double tempered at 450f than 425f deg's.
Blade length 9." to the Bolsters
Over all length is 14.375"
Blade height is 2.125"
Max blade Thickness is .157"
416 stainless steel Dove Tailed bolsters.
African Blackwood handle with a slight palm swell and Stainless hidden bolts.
Razor Sharp!!!
Comes with a Zippered Case.
Not Dishwasher Proof.
I use vegetable oil on the blade after hand washing.

Hi Kiltednerd.
Another way to describe it would be, I add a little thickness when grinding the scales so as the scales are not flat ground. Tapering larger to where your palm is. Equal amounts on both sides of the tang.

I never thought Chef knives would be so interesting to make. I have to think while making them that People want my Chef knives to out perform the ones in their kitchen or work. It makes the competitive side of my personality Kick IN.
