It is pretty clear that my kitchen knives are, most of the time, heavily inspired on the Japanese style kitchen knivesand I believe they have caught the spirit spirit of simplicity and objectivity of the Japanese cutlery yet with a style all of its own.
In their standard version, that you see here, they are the apex of simplicity and cleaness of design yet totally function oriented and crafted with materials that will give them an excellent performance and make them last a few lifetimes of day-in, day-out work in a professional kitchen. First and foremost, these knives are tools meant to be used and my customers list is filled with professional cooks from around the world that can attest to that.
These knives are fully handmade (no laser or automated operations involved in any phase of their production), have sellectivelly heat treated 52100 steel blades (that aways comes from an American supplier like NJSB or Jantz), chisel ground on the right side and with a very thin edge.
The handles are round with a flat face for easy hand indexation and made of morado, a beautiful, very strong wood that, for these qualities, is my standard wood for handles.
