These are a little bit of old school meets new school.
While they're very simple, there's a reason for everything. The steel is left very hard (61 C) and ground to a VERY thin edge, the steel has a forced patina for protection/lower maintenance (I think it looks neat, but that's not the reason for doing it), and the scales are very thin synthetics. They can roll around the hand into just about any position and be comfortable... no sharp edges, except for the edges.

The blades were flat ground to almost zero, and then gently feathered down to an edge on my 9" disc grinder, and it was all blended together with hand sanding.
The finish was done by dobbing mustard on the blades with a piece of bubble wrap. After sitting for about 30 hours, the blades were scraped off with a micarta scraper and lightly hit with 0000 steel wool and oil.
The handles were roughed in on the grinder, but then final shaping and finishing was done by hand. They were hand sanded to 500X, lightly buffed, and then hit with 0000 steel wool.
Every stitch was put in by hand.
While simple in nature, these knives were not a half-ass effort.
