Hello Leethal Cutlery, For carbon steel like 1095 selectively harden just the edge by heating to critical temperature with an acetylene torch and appropriately sized tip and temper at 375 degrees F. Use extreme caution and selectively heat the tip to a blue color. I used to have access to a Rockwell hardness checker and got a lot of experience in this heat treat process now I have to depend on files to test the hardness. Steel like S35VN, D2 and 154CM are a total different ball game as I'm sure you know.
