My mother was my favorite chef growing up (still a top contender), so as I develop my kitchen catalog I've been modeling my designs after the blades she's relied on most over the years. This is her paring shape and it measures just shy of 4" with a razor sharp free hand convex grind. The steel is Alabama Damascus featuring 416 layers of 5160 and 15n20 alloys. The handle features copper liners sourced from Jameson's 18 year Bow Street package, with ancient bog oak scales that are carbon dated to 5,460 years old, and a few copper pins.
