Angle on CPM-3V?

I got a CPM-3V knife in the mail today (Bark River Gunny) and I don't like the factory edge. I can feel the micro serrations. It is sharp, but too rough. Its also a convex edge.

I'd like to flat-grind the edge. The question - what angle? I sharpen my ESEE Izula II at around 18deg (green dot on my Edge Pro Apex), 1095 steel. CPM 3V is said to be a much better steel, so should I grind a shallower angle? Or should I keep a thicker angle?

Are you sure you don't want to keep the convex grind? That's the reason I bought a bark river to begin with. I've mostly heard people complain about the edge being too thin if anything. Have you tried stropping it to refine the edge? I don't have any knives in 3v though.

If it were me, I'd try to keep the factory geometry, and just take it to a higher polish. I doubt you'll want to put a more acute bevel on it. If anything, you might want a microbevel on it to strengthen the edge. But first I would sharpen it as is and do some cutting so you can see how it holds up. 3V should be strong and tough.
