Another kitchen addition from David Lisch

Some of you might remember the chef knife I "accidentally" bought from David Lisch last month. Well, this is the little knife I was originally going to him for. It's a paring knife with a few unique features. First, I wanted a good amount of height at the heel so I would get a few years of sharpening out of it (I've worn more than one paring knife out on the stones over the years). Second I wanted a handle that was normal sized. Paring knives usually have small handles to match their small blades, but my hand isn't any smaller when I use a paring knife, so I've never really understood that. This knife is so comfortable in my hand that I almost wanted to make it my EDC. I came to my senses and left it in the kitchen, but I've never been able to say that about a paring knife before.

At first I was a little unsure how the tall blade profile would perform in typical paring tasks, but after using it for about a week, I'm pretty sure it's going to do just fine. It's quite an agile little knife considering, and it feels so natural in my hand that I haven't even really noticed the added height. All in all, I'm really pleased with how this turned out. Kudos to Dave, as I think this was his first paring knife.

I think I need to stop buying knives for a while or my banana plants are going to look pretty bare:

Very cool. Dave Lisch makes some really nice looking knives. This one is true to form.
 
Thanks John I really enjoyed working with you on this project and yes this is my first paring knife and the smallest blade I have every made.
