I made this one of 440C - hardened by Roger Linger to 58-59 RH. It is a full convex grind, spine to edge. A little heavier than my other santokus....but since this one is intended more toward cleaver usage, that's ok with me.
The handle is made of 2 pieces of corian and one piece of Wilsonart Solid Surface tile (the lil' sliver). 100% stable materials and stainless to boot. Thanks goodness, because this one's going to my Mother...!
