Zebra wood will move a lot until it’s fully cured. It’s most stable if quarter sawn. I’ve used it both stabilized and unstabilized without problem. For a customer knife, I’d be safe, rather than sorry and have it stabilized.
I've used Cumaru without stabilization. It's naturally oily so shouldn't need it.
Just checked www.wood-database.com/cumaru/ and it's Janka is listed at 3330.
Cumaru is tough stuff. If I'm not mistaken, I sold robert the cumaru he used. In Brazil it's used for railroad ties and docks. It's basically unbreakable.
As for the zebrawood, post a photo please. Zebrawood is a name that gets used for a LOT of different striped woods
