All, I have a restored, small, and slicey carbon steel butcher knife for sale that still has a lot of life left in it for processing game. It was neglected for some time on the farm I picked it up at, but it cleaned up nicely. It has an interesting guard that flares on one side and flat on the other for thin slices.
