Any advice for trying to help a neighbor sharpen KNASA knives?

Yeah that will definitely teach you to remove a burr!

I highly doubt any of the claims and i would bet a decent set of waterstones (the way it should be sharpened) would do just fine. And for reference, I usually sharpen japanese knives at 12° per side, so it's not like that's an extreme angle for the given knife.

I would highly recommend against a belt sander, fastest way to mess up the profile of the edge.

This one's closer to 11 per side and used in a professional kitchen.

It’s true that it can go very wrong. But it doesn’t have to go wrong at all. Don’t try it if you don’t trust yourself to do it correctly.
