What I use now is a hair under 3/32, 6 inch and 440c.
What I'd like would be 3/32 (1/16 wouldn't be a bad thing), 7 inch, 3/4 inch wide and 1095.
The more flex the better. The grippier the handle the better.
What I am using is a Knives of Alaska Steelheader but I would much prefer a JK!
The taller blade on a fillet knife defiantly helps it cut in a straight line as you go down the back bone or skinning I guess a 1 1/8 would be tall enough.
I have got pretty good with my electric fillet knife now. It took a little getting used to but sure works on heavy bone fish like Catfish and bigger white bass.
I fish from time to time (every weekend in the summer and sometimes on weeknights too. Also take a dedicated fishing trip or two every year.)
Not sure about thickness on a fillet knife, I ordered a fillet-type knife from Bryan Breeden in 3/32", so I'll let you know how that works when it comes. I don't like as much flex in my fillet knives as most seem to like.
