That would be one of my first choices if not the first. They are making some nice ones. I have yet to see one that was not well made, but I like slipjoints.
 
Queen makes a nice Mountain Man lockback in 1095 with sambar stag scales. I love mine. About the same size as a Buck 110.
 
GEC and Queen are two who come to mind, I dont have the pleasure of owning anything GEC has put out but I bit the bullet yesterday and ordered some product from Queen. Cant beat good old USA made for your traditionals.
 
If you are looking for a lockback with clip, MooreMaker offers those in addition to a nice lineup of traditionals, all in 1095.
 
Already mentioned, but almost all GEC and MooreMaker are 1095. And many of the Queen. Have had really good reports on the heat treat on all three (Queen made most of the MooreMaker, so no surprise there).

I also have wondered about Opinel's steel, though never could figure it out. But I do love the performance, and even would say it behaves very similarly to 1095.
