Any knife makers vic Fort Hood/Gatesville area??

I haven't posted for a little while since I am currently working at Fort Hood (generally 7 days a week) . I happened to see a coal forge sitting outside a guys shop and have been keeping an eye out to try and catch him while he is working.
I was wondering if there was knife makers out this way that I could watch and maybe get some hands on training/knowledge from time to time?

I was in Gatesville and ran across a guy who has an anvil collection (I'm guessing 100+), he has some forges and a lot of other metal working equipment. It is very impressive to say the least! I even got a chance to check out a bridge anvil.

I'm still looking for an anvil (he won't sellany of his since he collects them).
