Everyone knows coke vs pepsi, Ford vs Chevy or dish vs direct TV, but which knife companies if any have rivalries ?

Cold Steel versus the world, and fair warning: fans of various companies versus fans of other companies. Of course, the latter are far worse than any actual rivalry between the companies themselves.
Ganzo vs benchmade, spyderco, etc.
Victorinox vs...
Nobody.
Not only do they not have any competition to speak of, but when they bought out the only real competitor they *did* have they went to great lengths to ensure nobody lost their job.
Have I mentioned how much I like Victorinox?

Perhaps you may be right. How is a company ripping off other companies' products to be considered a rivalry?

There's a new company called swiza trying to modernize the Swiss army knife, but I really don't think they'll ever give Victorinox a run for their money because they just don't know what Victorinox knows and their knives are ugly.
Several years ago Spyderco took Benchmade to court because Benchmade was using the round opening hole without permission in some of it's knives (like the original AFCK). Spyderco owned the round opening hole, and it took court action to make Benchmade stop using it.
Imagine that, Benchmade "stole" a design owned by another knife company. Spyderco was none to happy about that. So much so that they brought out the lawyers.
For the record, I like Benchmade. And I own a few of those original AFCK's.
They all do...it's called "competition." All knife companies want you to buy their knives, not somebody else's.
Are you talking about X and Y not liking each other? Maybe you can give us an example so we know what you are asking about.
