Any watch guys have advice for the possibility of an everyday vintage watch?

My one contemporary watch I'm left with and it more than a dozen years old now. Omega Prestige. Sadly after the days of Omega in-house movements. It has an ETA c.2892 which Omega calls their c.1120. Regardless of how Omega decorates it, it is still a common movement (though Omega's are certified as chronometers) used by many Swiss watch brands these days. Same movement used in Omega's contemporary flavors of the Seamaster and others too.

As Piso Mojado said a hand-wound watch limits your choices. Buying an Automatic would be easier. With mechanical watches you should factor in a cleaning every 5-7 years. I have a local watchmaker who is reasonable $50-100 per watch for complete dis-assembly, cleaning, and adjusting. He is a great guy, so I view maintainance as a plus to Vintage watches.

I came to knives after watches. Yes, getting into watches is a slippery slope. There are some great, robust watches out there for $75-200 dollars.

The problem is finding a COMPETENT watch maker, especially locally.

For the current Seiko 7S26 automatic (an automatic movement which cannot be hand wound BTW) I advise just wearing until it fails to keep time adequately, then have it serviced (that's just me). If it slows unacceptably, have it cleaned and lubed. If it runs stupidly fast, have the mainspring demagnetized at which time you can have it cleaned and serviced.

But you are correct, if you aren't willing to pay to have a mechanical watch regularly serviced excepting Seiko (that's me), stick with quartz.
 
Try a used ORIENT. They are excellent quality and value, and they make their own movements. I have a 30 year old world timer that I bought new old stock for $100. It is a great watch.

Best vintage watch (movement, design, innovation, heritage) for your money.
They can be found at relatively cheap prices, and the quality is on par with the Rolex, heuer, omegas of that era.

I own watches from all of those makers and the gallets are still my favorite.

And if you want something a little cheaper with a more tactical military feel look at Marathon (started by gallet)
