Any way to tell difference in stainless?

Hey guys, my first post on this forum. I've been tinkering with making knives for about a year now. I started with random pieces of scrap laying around just to get a feel for everything. The last two I've made were 01 and turned out pretty decent. Anyways on to my question a friend of mine recently gave me a few pieces of stainless he got from work. He said it was either 403 or 440. So I was wondering if there was any way for me to identify this steel?

Yes I too would be interested in some info here.
I need to test a knife stamped 440C
There is some chance it is really 8cr13mov labeled 440C
It IS made in China I believe judging by the price : Large ti handle for $45 including shipping . . . yah . . . I'm thinking . . . probably not made in Germany for that price . . .

UPDATE: I just looked and it says China on the box.

I have had some luck putting fresh lemon, right from the lemon, onto other knife blades and leaving a thin film so some oxygen can get to it and freshening it from time to time. Some blades turn gray, some go more brown, some show almost no change but just a slight whitish cast; more of a "water spot".

So . . . is there any hope for me ?

PS: I have no other 440C in my possession for a known control sample other than, possibly, this one blade.

I think this is a valid and interesting thread worthy of some discussion.
As soon as I posted the above post last night I found Blade Forums to be inaccessible the rest of the night and all "data base error".

I guess I need to buy a knife with "known" quality 440C and do some comparison work of my own.
Will you, or any one else who really knows and likes 440C, recommend a good one to get?
