I have only gotten into proper sharpening in the last 3 months. I got my DMT Aligner just before Christmas and have since bought 3 more stones for it. I have the 6 grades from XX Course down to EE Fine as well as the curved stone for sharpening knives with a recurve and the tapered rod for serrations.
Now I test knives to see if they can shave, if they can then they are 'getting there' for sharpness. I have an Ontario RAT-1 folder sitting on my desk that I often play with - I keep stropping it so now the edge is getting pretty mirror like and also sharp enough to whittle hair.
For ease of sharpening the carbon Opinel knives are hard to beat - within minutes on the strop they start to scare me. They are great slicers!
