Anyone grind exclusively sitting down?

I prefer sitting at the wheels when I'm grinding backs and hafts, you can rest your elbows on your knees giving you more control. I don't mean on a stool either, feet on the ground is best. I sit at the flat horizontal platen too but that's just because it's attached to a Burr King with one of the aforementioned wheels that I grind backs on. That's how we did it at the knife factory so I got used to doing it that way. I think Gil Hibben is a sitter too.

I grind seated.

It takes a lot of energy to stand, add in grinding and the concentration and you can really feel the toll at the end of the day.

Seated, takes much less energy and takes less toll on the body.
 
Go old school? (the dogs need respirators)

I can't sit for too long, i have dodgy hip and it helps to stand and move around.

I would look at improving your dust extraction. Pull a lot of air past the grinder so you can funnel out the dust into a trap.
