I'm seriously thinking about picking up a professional model Edge-Pro. I've seen one in action and 2 trusted knife buddies rave about it. The price tag is a bit stiff so I'm curious.......
Has anyone had any problems useing it?
Regret buying one?
Thanks,
Brent...

Brent,
First off, no regrets.
Second, like any sharpening system, it takes some practice, though less than freehanding benchstones and with better results.
Third, tape both sides of the blade to avoid scratching it.
Lastly, call Ben at edge pro and talk to him about it. He knows it better than anyone and is the sort of decent guy rarely heard about and will answer honestly, tell you more than you ever needed in the form of tips and if all else fails, there's a guarantee.
Go for it buddy, you saw what an amature did to your 705's edge.

No regret.
It takes a bit of experience (what doesn't?) and a bit of knowledge in "special circumstances", otherwise it is a close to perfect as can be. In case of doubt, just ask Ben.
Happy sharpening

No regrets whatsoever. Your only problem will be having to fend off your friends requests to get their knives as sharp as yours. Plus it's so well built it will last for quite a while longer than other systems. You'll just need to replace your coarse stones after a while. Take the plunge, you won't regret it.

I have both the Apex and the Pro models, I have no regrets at all and only wish I had bought them sooner.

In regards to prive, unless you're sharpening large blades (excess of 10") or sharpening an awful lot of knives, the Apex will suit all of your needs.

If you have any questions, feel free to email me. Hope this helps.

It's a great system, in fact, I have a badly mangled 910SBT from a friend on my 'to do' list right now. My only fear is that when I return it to him, he won't use it...--OKG

You asked if anybody has problems,
not if people like it. Let me say
at the start that I like the EdgePro.
It is the best manual sharpener that
I know of and all the other opinions
seem to confirm that.

As for the problems, you've already
seen above that it takes practice.
You need to be coordinated with both
hands, holding the knife blade flat
on the table first with one hand and
then with the other hand.

The second problem that I have is
in sharpening small blades, especially
ones with several bevels tapering off
to leave very little area that can
lay flat on the table. A very small
flat makes it difficult to hold the
knife steady on the table. I've had
good luck with small knives by holding
the blade down with a couple of fingers
instead of grasping the handle. I
sometimes use the scissor attachment as a clamp for my small knives and talked with
Ben a bit about what it would take
to create a dedicated clamp for knives.

If you are thinking about some other manual
system versus the EdgePro, I would suggest
the EdgePro. Once you use the EdgePro, all
the other manual systems will gather dust.

Well..... you guys have TOTALLY FAILED to discourage me!
Thanks for all the input.
It'll be my first toy of the new year!

Yeah, I was a bad boy again. Classified00 sent me one of his knives to sharpen (and we're going to video tape it!) Just for fun, a buddy gave me a common, garden variety paring knife.
Now, the gag is that Classified00 is really protective of his edges, and once caught his wife going for one of his babies to open a common cardboard box.
So-o-o-o, I took this paring knife, and I gave it the most perfect Edge-Pro edge in history! Ben Dale himself would need sunglasses and Block Number 57 to bask in the glory of this edge! It's sharpened at 13 degrees! And I'm sending it to HIS WIFE!
Now she will have the sharpest knife in the house!
Ya' know, they say 'Sicilian' spelled backwards is 'revenge.' I disagree, it spells ROTFLMAO!--OKG
