Anyone use a Hatchet to process game?

Anyone use a Hatchet in processing deer, bear and/or other big game?

Something like this?

I've used this hatchet to field dress and butcher deer. Fox knives Roman Style Hunter's Axe, available at AG Russell.

The blade is brittle and will chip if you hit bone. Otherwise, a good tool.
