Apple slicing knife? (another good excuse to buy another)

I second the opi or the Ben hogan gec 64 or 65. These GECs are nice and slender and work fruit real well :)
 
A fine choice.;) If you get a handle with some nice grain, that makes it harder to convince yourself to modify it.

Opinels, and SAKs are an excellent choice. Benefit to having a SAK is that you can get a can opener and some other tools. Check out the Victorinox Alox Cadet, it's super thin and had a good selection of tools. Also, the blade slices apples great.
 
What's funny is that everything I wanted in a fine apple slicer sounds like

it would also make a fine Bird & Trout.
 
Well... My favorite apple knife used to be my Opinel No. 10. It was the king of the roost for years, unmatched in the arena of food preparation and consumption.

That is, until... a challenger appeared!

Now, on the throne sits a new monarch, the Sardinian Resolza (or Pattadese, as some call it). 12C27 Sandvik steel, 11cm blade. Just about perfect for anything having to do with food. (And not too shabby for everything else, either!!!)

The Opinel #8 just showed up. The thin inox blade is perfect for slicing.
Olive wood handle was worth the extra $.

It sliced well on a pear. Tonight will be a potato and onion.

I'm breaking it in slowly, like an Audi S8. :eek:

The #8 seems to be the perfect size for me.

I'll think up another reason for the next one.
