I'm not familiar with the knife laws in those states, but the permit is for CONCEALED weapons. Unless their laws allow open carry, you can only conceal carry.
Under Arizona Code 13-3102 specifies that only concealed carry is restricted, not open carry, subject to county and city ordinances and local establishment's rules of course. No length restrictions at the state level. Also take note of any laws on "menacing" or "causing alarm." Walking into a PTA meeting with a 10" bowie on your belt isn't exactly a great idea, know what I mean?
13-3102 names 13-3112 (CCW permit law) as an exception, and I noted that 13-3112 uses the term "weapon" over and over rather than "firearm" or "handgun." Therefore, there is a possibility that possessing a valid permit covers knives and other weapons as well.
