Okay, so bring... A skinny and a fat ASH, and a 3B2 and I'm good to go!!!!![]()
As many of you probably know, the ASH-1 was offered in 3 thicknesses: .188" (skinny), .225" (LE) and .320" (fatty). However, the 3 had different finishes that were available:
- skinny – coated
- LE – satin
- fatty – coated or double cut
There have been some limited-issue blades that were exceptions to the finishes offered, but for the most part the finishes listed above were the ones available.
What do you think about having the choice of coated, double cut or satin finish available in all 3 thicknesses when the ASH-1 is released again (notice I said "when", not "if")?
On blade thickness, how thin would you like to go, 1/8" (.125") maybe, or even thinner? I'm thinking especially for food prep.
My knife buying has slowed down a lot, but I would definitely NEED one of those (satin finish please)!That is kinda what I had in mind! It would be okay for the Skinny version to go as thin as .125" or .100" because that would make for the sweetest compact chef's knife ever!:thumbup:

I thought about the thin NICK, but they rarely are for sale these days and the price is higher than a current release model would be. Also, the blade style is different.Want a Kitchen purpose made Busse?
Already exists, it is called a N.I.C.K, made in two thicknesses, I have a thin one, it will not replace my Murray Carter Kitchen knives, but it has its place in the kitchen.
