ATS-34 Kitchen Utility

This is the 2nd stainless steel knife heat treated "in shop". It is a kitchen paring knife or utility knife made from Hitachi ATS-34 stainless steel. It has been heat treated with a sub zero (-100°F) quench and triple tempers for a hardness of 63-64HRC. The full flat grind has excellent edge geometry that makes the knife a blast to use. The spine has been mirror polished for a classy touch. The handle is made from nicely figured walnut and has a "D" shape favoring right hand use, but it is equally comfortable in the left hand. I decided to use my old logo on this knife, which is a letter "S" in tribal font, and looks cool! Every kitchen needs a knife like this!
