Attention whittlers/carvers, what's your go to GEC knife for this purpose?

Less research.

More whittlin'!

By this I mean, use what you have and just get going.

Almost everyone reading this forum has more than enough knives to do the job, and wood is everywhere.

Sharpen to the best of your ability, and start making chips.

You will quickly learn what works for you and what doesn't, and that kind of learning comes only from experience - not to say that advice from those who have been there isn't helpful, but there is a tendency sometimes to research stuff to death, and just get confused with the details.

There are a lot of good tips etc. (including a LOT of conflicting advice!) available on the 'net, in wood carving forums etc.

Most important though - DO IT!
