Why is AUS 10 seldom used in cutlery? Is it cost prohibitive for the US market? Would not AUS 10 be an improvement over AUS 8 and a very good alternative to 440 C (including higher toughness at similar Rc)?
 
bcus they're japanese steel and expensive?
I don't know sometimes I ask myself the same question...
Manufacturers usually use Aus8 for their economy knives, but with higher class knives, I think they'd rather use 440c which is a USA steel or go for VG10 for the quality...
Rarely I see any manufactures use Aus10 or VG1 (Coldsteel). Well maybe they'll use it in the near future ;)
 
Likely it's a cost thing. Like it costs as much (or more) as ATS-34 or VG-10 but doesn't offer better performance. That's my guess anyway. There has to be a reason we don't see it much, and that'd be as good as any.

I have an AUS10 blade. Bought it to try the alloy. It does hold an edge about like 440C.

The AUS series is made by a single Japanese plant and is mostly only available in Japan and Taiwan. So that's one limitation.

AUS 10 used to be fairly common on high end Japanese cutlery. Now those same makers mostly use VG10 as VG10 is perceived to be superior.

If you are looking for AUS 10 to replace AUS 8, that would raise the cost quite a bit. AUS10 is harder to machine, which raises the cost of the blade. Manufacturing costs are greater than raw material costs, even throwing in the lower Taiwanese labor rates for knives made in Taiwan.

So what you might maybe look at is replacing 440C with AUS10. I doubt there would be any significant difference in performance. The cost would go up, though. AUS10 is only available from one manufacturer and is pretty much only used in cutlery. 440C has multiple suppliers and is used for many products. So the cost of 440C is lower.
