There's this Santoku I made for myself around 2 month ago. Playing around with a batch of new burl woods- and to see how this style of blade would perform in the kitchen. After a few tweaks (and a lot of polishing) I'm satisfied enough in this style of blade to share it with you.

180mm Santoku -- 62mm tall at the heel
*edge is curved in a way that no part lays flat on the cutting board
Some blade specs:
Blade steel: AEB-L - Cryo & 3x tempered to 61HRC
Blade detail: Deep S-grind, Hammer Texture Kurochi
Handle: Double dyed "Ocean Tone" Box Elder Burl, Hybrid Clear Epoxy Butt, Brass fittings
Handle Detail: Modified Octagon "Wa"
Closeup on the hammer texture kurochi & some crisp lines
Highly figured wood burls get me all the time
Handle's 100% Waterproof - sealed in multiple coats of furniture polyurethane.
