if i were to attempt it, i would use a scarf joint, and at quite an angle too. even so, i have serious doubts in how long any such joints will last on an ax handle.

Just use a single solid piece of wood. Why introduce a weak spot into an axe handle? That makes no sense. If you want a two-tone look then mask and stain accordingly.
